Sauerkraut Slaw

This is a different version of slaw from what we're used to, but it is so good

 

 

with BBQ and hot dogs.  It also makes a great side with seafood.

A glass jar is filled with sauerkraut, diced green pepper, red onion, celery and shredded carrots.

​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​

​Sauerkraut Slaw                                     Makes 4 to 6 servings

Ingredients

​

​

 

•  1 (1 lb) can or jar of sauerkraut, drained

​

​

•  1 cup green pepper, ¼-inch dice

​

​

•  1 cup red onion, ¼-inch dice

​

​

•  1 cup celery, ¼-inch slices

​

​

•  ½ cup shredded carrots (optional)

​

​

​

•  ½ cup good cooking oil

​

 

•  ½ cup plus 2 Tbsp white vinegar

​

​

•  ½ cup water

​

​

•  1 cup sugar

​

​

​

​

​

​

​

​

Instructions

​

​

​

1. In a large bowl, mix together the first 5 ingredients.

2. In a small bowl, whisk together the oil, vinegar, water, and sugar.

​

​

    An immersion blender is great for combining these ingredients.

​

​

​​​​​​3. Add the oil and vinegar mixture to the other ingredients and mix

 

 

    well. seal tightly and let the mixture marinate for at least 8 hours

 

 

    or overnight in the fridge.  Drain before serving.​​​​​​​​​
